Bacon Chocolate Chip Pancakes

Bacon Chocolate Chip Pancakes
Makes: 12 pancakes
Start to finish: 30 minutes
  • 12 piece of bacon, cooked and chopped
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 6 tablespoons sugar
  • 1 teaspoon salt
  • 2 eggs
  • 1/3 cup melted unsalted butter
  • 1 cup buttermilk
  • 1 cup milk
  • 1 cup chocolate chips (dark or milk)
1. Preheat griddle to 325°F / 160°C or or a skillet over medium-low heat.
2. In a large bowl, mix together all dry ingredients: flour – salt.
3. In a medium bowl, mix together all wet ingredients until well-combined: eggs – milks.
4. Pour wet ingredients into dry ingredients, mix just until combined.  Lumps are cool.  Stir in chocolate chips.
5. Once skillet is hot, grease with a touch of butter.  Put desired amount of bacon in pan, and scoop 1/4 cup of pancake batter on top.  Flip after about 3 minutes or until bubbles rise to surface.  
6. Cook other side for 2-3 minutes, or until golden brown.  
If you really want the ultimate breakfast, scramble some eggs and sandwich in between two pancakes.
